  7. 1 bay leaf

  10. 1/2 teaspoon ground nutmeg
  11. 1/2 teaspoon ground mace
  12. 1/2 teaspoon ground ginger
  13. 1/2 teaspoon ground garlic
  14. 1/2 teaspoon red chili powder (adjust to taste)
  15. Salt to taste

Instructions:

  1. In a dry skillet or pan, toast the coriander seeds, cumin seeds, fennel seeds, cinnamon stick, green cardamom pods, cloves, bay leaf, and black peppercorns over medium heat. Toast them until they become fragrant and lightly browned, stirring frequently. This should take about 2-3 minutes.
  2. Remove the toasted spices from the heat and allow them to cool to room temperature.
