- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground garlic
- 1/2 teaspoon red chili powder (adjust to taste)

Instructions:
- In a dry skillet or pan, toast the coriander seeds, cumin seeds, fennel seeds, cinnamon stick, green cardamom pods, cloves, bay leaf, and black peppercorns over medium heat. Toast them until they become fragrant and lightly browned, stirring frequently. This should take about 2-3 minutes.
- Remove the toasted spices from the heat and allow them to cool to room temperature.
- Once the spices have cooled, transfer them to a spice grinder or mortar and pestle. Grind them into a fine powder.
- Add the ground turmeric, ground nutmeg, ground mace, ground ginger, ground garlic, red chili powder, and salt to the ground spice mixture.
