Ingredients:

  1. 10-15 dried red chili peppers (adjust to your desired level of spiciness)
  2. 3 cloves of garlic, minced
  3. 1 tablespoon paprika (for color and mild flavor)
  4. 1 teaspoon dried oregano
  5. 1 teaspoon dried thyme
  6. 1 teaspoon ground cumin
  7. 1 teaspoon ground coriander
  8. 1/2 teaspoon black pepper
  9. 1/2 teaspoon salt (adjust to taste)
  10. 2 tablespoons olive oil (or any neutral oil)

Instructions:

  1. Start by preparing the dried chili peppers. You can either use whole dried chili peppers or dried chili flakes. If using whole peppers, remove the stems and seeds to reduce the heat level. Wear gloves and be cautious, as chili peppers can be very spicy.
  2. Heat a dry skillet over medium heat. Toast the dried chili peppers or chili flakes for a few minutes until they become fragrant. This will enhance their flavor.
  3. Place the toasted chili peppers or chili flakes in a spice grinder or food processor. Grind them into a fine powder. You can also do this with a mortar and pestle, but it may take more effort.
  4. In a bowl, combine the ground chili powder, minced garlic, paprika, dried oregano, dried thyme, ground cumin, ground coriander, black pepper, and salt.
  5. Heat the olive oil in a small saucepan until it’s hot but not smoking. Pour the hot oil over the spice mixture. This helps to release the flavors of the spices.
  6. Stir well to create a paste-like consistency. The Peri-Peri masala is ready to use.
  7. Store the Peri-Peri masala in an airtight container in a cool, dark place. It will remain flavorful for several months.

To Use Peri-Peri Masala:

  1. Peri-Peri masala can be used as a marinade for chicken, shrimp, or other meats before grilling or roasting. Simply rub the masala onto the meat and let it marinate for at least 30 minutes or longer for more flavor.
  2. You can also sprinkle Peri-Peri masala on roasted vegetables, potatoes, or even popcorn for a spicy kick.
  3. Adjust the quantity of masala according to your spice tolerance, as it can be quite hot.
